It's no secret, I love a good reason to celebrate. Heck, it doesn't even need to be a reason to have some fun or make some Slow Cooker Salsa Chicken for that matter. But, when there is one, you'll find me lining up with party hat on.  On that note, there is a festive holiday that you may or may not know about yet. It's celebrated across Mexico and in other Latin American countries, it's called Día del Niño. If you are Spanish speaking or if you've got some schoolin' under your belt like I do, it means "Children's Day" or "Day of the Child".  Mark your calendar for April 30th and hop on board and plan something too.

Now we know that children are celebrated on Día del Niño, but how exactly? That's a great question! It’s a time where communities come together and hold special events for children. They spend the time to remember the joys of childhood while sharing. It's a special time to share with your kiddos. It's amazing that just cracking open the lid can summon so many memories and good feelings. Their salsa embraces my own approach with cooking, it contains only 5 simple ingredients yet packs a delicious punch. I couldn't help but to honor this simplistic product by making my own simple recipe. You might be familiar with my Fiesta Slow Cooker Chicken recipe which uses cheddar soup. This Slow Cooker Salsa Chicken scales back a bit and is made with simply chicken and salsa. So easy, so yummy.

Slow Cooker Salsa Chicken

Ingredients

  • 1 Jar of HERDEZ® Salsa Casera (16 oz)
  • 1.5 lbs Boneless Chicken Tenderloins

Instructions

  1. Add chicken to your slow cooker, pour salsa evenly over the chicken. Stir periodically. Cook in your slow cooker for about 4 hours on high or 6 hours on low.

Oh my goodness! I LOVE super easy meals! This one is calling my name. Since our family continues to grow, I don't have much time to spend in the kitchen, so I've fallen in love with slowcooker meals.
