Cute Rainbow Cupcakes To Make You Smile

Don't rainbows make you smile? They're a little treasure that can only be seen for minutes at a time. That might also be true for rainbow cupcakes if you know what I mean. Now you see them, but they won't last. Yum. This post contains affiliate links.

These rainbow cupcakes are as easy as... cake to make. Using a boxes mix and store bought candy, anybody can make these. Let's play with our food!

DIY Rainbow Cupcakes

  • Pillsbury Funfetti Cupcake and Cake Mix in Aqua Blue Prepared (8.25 Ounce Pkg for 12 Cupcakes)
  • 2 Containers of White Frosting.
  • Blue Food Dye
  • Airheads Xtremes Strips (Each strip cut into 3 equal parts)
  • White Icing (optional) to adhere the candy together.

While you're baking up the cupcakes, prepare the Airheads Xtremes Strips. Trim each strip into 3 equal parts. Take 12 of these mini strips and use kitchen shears to trim the sides to form a cute *ribbon*.  You are basically trimming a little triangle off of each side. Two snips will do it.

It's time to make the bow *loop*.  Loop one of the candy strips around and press together very very firmly to get them to stay. If you don't have luck with this you can try two things. A tiny, tiny dab of water which will make the sugar stick together or a little white icing which will also do the trick.

Once you have made all 12 bases and 12 loops, it's time to stick them together. You can use a tiny, tiny dot of water, white icing or just press them together very very firmly. Like put your back into it firm.  Once the bows are set, let them sit a while until they dry if needed. Once they are dry or simply let to set for a while, they will generally keep their shape very well.

Prepare your frosting, use blue food coloring to tint your white frosting to your desired shade. I recommend mixing in one drop at a time. Make sure to keep count so that you can make the second tub the exact same color. My trick to frosting cupcakes and cakes perfectly is the Wilton Dessert Decorator Plus. Don't worry if you're not "good" at frosting or just completely clueless like I am, this tool is a complete sanity saver. If you've ever see me frost anything, trust it's always this fabulous frosting hack.

After your cutey cute cupcakes are frosted, it's time to gently press your lil candy bows on. I put mine on the side, but you can put them on the top, too. Either way, you'll have the perfect cupcake treat.
