Cheesy Fiesta Chicken Recipe

Have you ever thought it was the wrong day?  Today I thought it was yesterday, wishful thinking I guess. Sometimes weeks go by in such a blur between getting my son off to school, taking care of our three fur babies, working and then the task of getting that dinner on the table that we always love and enjoy.  The way to sanity for me is to use shortcuts.
