I adore spring eats for Easter and I’m all about keeping traditions. For most of my life, my grandmother made her classic deviled egg recipe for every special family holiday meal. I really miss those special moments, it’s really amazing what a simple gesture can do for the soul. This year I plan to honor her… with a twist that I know she’d be proud of. When Reese challenged me to “step outside of my comfort food” with a recipe this season, I started thinking of oh-so-many ideas. But this artichoke stuffed recipe idea instantly won me over when I thought it up. I thought… hey, maybe my simple twist on this traditional recipe is boring. Let me tell you, simply adding artichoke hearts to this basic recipe took it from wow.. to WOW. It’s seriously popping, guys. Is your mouth watering yet?

Artichoke Stuffed Deviled Eggs Recipe

Reese Tender Small Artichoke Hearts, freshly grated parmesan cheese and a splash of fresh lemon take this recipe way over the top.
To get started, finely chop 3 Reese Artichoke hearts and add to a small mixing bowl.
Remove the yolks from the hard-cooked eggs; carefully slice off the top 1/3 of each egg and remove the yolks. Set aside 4 yolks for a different use and add the remaining yolks to the bowl.
You can reserve the 12 egg tops that you removed to either place on top of your final stuffed eggs or reserve them for another use, it’s your choice. Add the remaining ingredients to the mixing bowl to mash and blend together.
Then, carefully stuff the eggs with the mixture. Keep them covered and refrigerated until you are ready to serve them. For an added pop, garnish the finished eggs with a dash of smoked paprika or curly parsley. The end result? A perfectly pretty deviled egg with an amazing pop of flavor.
