Best Leftover Turkey Sweet Potato Casserole

Hope you all had a wonderful Thanksgiving and that your refrigerators are bursting at the seams with yummy leftovers. I'd say after the 2nd or 3rd reheat, things start to get boring though.

Not with this best leftover turkey casserole. I actually made it for the first time last year and it was an instant hit.

The clever recipe includes the secret ingredient that makes it extra moist and tasty. I'm not kidding. This one ingredient is EVERYTHING.

That unexpected ingredient is none other than mayonnaise!

Then, the addition of mayonnaise and little cheese really takes this over the top.

I have become obsessed to the point that I even make it any time of the year when we're craving comfort foods.

I will easily use a boxed stuffing mix, regular turkey breasts and store-bought mashed sweet potatoes or regular mashed potatoes to whip this up in no time.

Both just turned out perfect! So whether you have a 10 lb pile of either mashed potato variety, you can definitely use it up here.

I think Mac & Cheese, Broccoli & Rice Casserole, Green Bean Casserole and even Au Gratin potatoes would be delish in this recipe.

I'd probably swap any one of those with the mashed potatoes to see how it turns out.

You could totally just add on another layer if it fits in your baking dish.

As long as you get the moisture back into the chicken with the cranberry sauce and mayo, you should be totally good to go with a variety of combinations.

You might even want to call up some more company to come over and enjoy this with you. I recommend making 2 or 3 because it will be gobbled up quickly!

Best Leftover Turkey Casserole

Prep Time: 15 minutes
Cook Time: 40 minutes
Total Time: 55 minutes

Best Thanksgiving leftover casserole you can make. Makes turkey moist again and layers ingredients like leftover stuffing and mashed potatoes for the ultimate meal.

Ingredients

  • 4 cups leftover prepared stuffing, divided
  • 4 cups coarsely chopped leftover cooked turkey (about 1 lb.)
  • ¾ cup Hellman's® or Best Foods® Real Mayonnaise
  • ¼ cup whole berry cranberry sauce
  • 2 cups leftover mashed sweet potatoes (or mashed potatoes)
  • 1 ½ cups shredded mozzarella cheese

Instructions

  1. Preheat oven to 375°. Spray 8-inch baking dish with no-stick cooking spray. Spoon in 2 cups stuffing, then top with turkey. Combine ¼ cup Hellmann's® or Best Foods® Real Mayonnaise with cranberry sauce; evenly spread over turkey. Combine remaining ½ cup Mayonnaise, potatoes and cheese in large bowl. Evenly spread on turkey, then top with remaining 2 cups stuffing. Bake 40 minutes or until heated through. Let stand 10 minutes before serving. Garnish, if desired, with dried cranberries.

Notes

  1. Preheat oven to 375 degrees. 
  1. Spray 9x13 inch baking dish with no-stick cooking spray.
  2. Spoon in 2 cups stuffing, then top with turkey.
  3. Combine ¼ cup Hellmann's® or Best Foods® Real Mayonnaise with cranberry sauce, evenly spread over turkey.
  4. Combine remaining ½ Mayonnaise, sweet potatoes, and cheese in large bow. Evenly spread on turkey, then top with remaining stuffing. 
  5. Serve and enjoy!

Five stars - husband says "it's the best casserole I've ever tasted". :) This recipe IS right from the Hellman's website, except this one calls for one additional cup of stuffing. I don't mind others tweaking recipes to post, or just passing along ones they've tried and liked, but the verbiage makes it seem like this author created this recipe from scratch. Did I miss something? I wanted a 9x13 pan full so just eyeballed some ingredients and layered them in, skipping the top stuffing layer and just putting all on the bottom. Fabulous taste, and reheated just fine the next day as well! A "keeper" recipe, for sure. :)
