Easy Cheese and Beef Melts

Do you suffer from dinner boredom? I love trying new things, but in all honestly, I don't have a whole lot of extra time during the week. This week though, I served up something tasty and creative. Enter Cheese and Beef Melts baked up to glorious perfection. I was more than pleasantly surprised after being challenged to make a meal with the Helper Free Ground Beef Rebate. Wait, what? Did she say free beef? I sure did! Don't worry, I'm going to share this easy and delish recipe AND tell you how to claim your free beef! Sweet, right? Who loves you best?

In case you have guess what the surprising filling is in these quick meaty pockets, let me tell you.  It's Hamburger Helper!  Oh yes, it is! (Didn't even think this was a.) a possibility and b.) that it would actually taste awesome.) I used the Hamburger Helper™ cheeseburger macaroni and some extra cheddar cheese to take these over the top. A little extra gooey cheese brings these right on home.  Let's get to the how to make em' now.

Easy Cheese and Beef Melts

Ingredients

  • 1 lb lean (at least 80%) ground beef
  • 2 teaspoons chili powder
  • 1 cup hot water
  • 1 ½ cups milk
  • 1 box Hamburger Helper™ cheeseburger macaroni
  • 1 cup shredded Cheddar cheese (4 oz)
  • 2 cans (16.3 oz) Pillsbury™ Grands!™ refrigerated buttermilk biscuits

Instructions

  1. Heat oven to 375°F. In a skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until brown; drain. Stir in chili powder. Stir in hot water and milk, sauce mix and uncooked pasta (from Hamburger Helper box). Heat to boiling, stirring occasionally. Reduce heat; cover and simmer 14 minutes, stirring occasionally. Remove from heat; uncover. Stir in all of the of the cheddar cheese.
  2. Press each biscuit into 6-inch round. Spoon meat mixture onto center of each round. Fold dough in half over filling; press to seal. Place on greased cookie sheet.
  3. Bake for  9 to 14 minutes or until golden brown.

Easy right? Dinner doesn't need to be a snooze-fest with easy shortcuts that actually taste good. That's my theory.

My fiance just printed the LUZIANNE POUR-N-STIR tea concentrate. She used coupons earlier to get a bunch of stuff at Rite-Aid including a blow dryer and a beard/moustache trimmer and makeup for about $3 and will get about $20 back in rebates. :-)

I would probably print the Truvia coupon since my fiance likes that for coffee. She is the couponer in our house, so I just let her print what she wants and she saves us a huge amount of money each month.
