Warmer weather has started to surface here and it's making me want to try fresh new foods. My family loves rice so it's a big no-brainer for me. I just made some yummy Citrus Infused Rice with Cilantro. Seriously no fuss and a big break from the norm. This is a perfect side dish for so many of our basic staples around here. Last month, I really got to thinking about unique but everyday ways to use citrus in meals for this big list. Between adding to salads and smoothies or to chicken and rice, there are so many ways to freshen up a meal with a slice, squeeze or pour. Adding a new flavor to rice is especially easy with the help of fresh juice.
To pack some flavor into this side dish, I added 100% Florida Tangerine Juice from Noble Juice and some fresh cilantro. With just a couple of ingredients, you can really change up dinner. That's what I'm talking about! If it's easy, it's for me!
Are you ready to try something new?
- 2 Cups of Water
- 2 Cups of Citrus Juice (Noble Tangerine Juice was used)
- 2 Cups of Rice
- 1 Tbsp of Olive Oil or Butter
- 1 Tsp. of Salt
- ½ Cup of Chopped Cilantro
- Add all ingredients except cilantro into a large saucepan and bring to a boil while stirring. Cover and reduce heat to a low simmer until rice is cooked (approximately 22-25 minutes). Add cilantro, fluff rice and serve.
