Savory Tomato Pie Recipe

Imagine a warm bite of the perfect comfort food in pie form.

Delicious layers of sliced fresh tomatoes within a bed of cheesy baked heaven.

This easy savory pie is perfect for a quick and delicious meal any night of the week.

This hearty dish could not be more perfect as a part of a fall dinner.

Just look at these melty layers of heaven!

The original recipe used a homemade crust but for my own ease, I swapped it out for a pre-made pie crust. Of course, you can easily use your favorite savory crust to make this with so easily.

The sophisticated taste of the Parmesan cheese with the tomato is a just perfect combo.

A perfect flavor match. I'm getting hungry just thinking about it.

I can't stop thinking about this pie still in 2020, even though I hadn't made in in NINE years.

I felt it was time to revisit this little hidden gem. SO glad that I did.

FALL TOMATO PIE RECIPE

This easy pie recipe has unbelievable flavor and the best part is that it's SO easy to make. 

Just a few simple steps and this is ready for the oven.

You can choose to do the store-bought pie crust two ways. Either just add ingredients and bake or parboil first like I did in the photos.

Then it's all about the layers!

Place the tomato slices on the bottom of the pie shell in one or two layers, season with salt and pepper to taste.

Spread the chopped green onions evenly over your tomatoes.

In a bowl, mix the mayonnaise with the Parmesan cheese, spread mixture evenly over the tomatoes. Talk about a slice of magic.

Bake in oven until golden brown and bubbling, about 30-40 minutes.

Let the gorgeous pie cool for 5-20 minutes before slicing and erving.

Tomato Pie

Yield: 6-8
Prep Time: 10 minutes
Cook Time: 35 minutes
Total Time: 45 minutes

Perfect tomato pie made with a store-bought crust.

Ingredients

  • 1 Pillsbury Pie Crust
  • 2-3 Large Sliced Tomatoes
  • ¼ Cup Chopped Green Onions
  • 1 Cup Mayonnaise
  • 1 Cup Grated/Shredded Fresh Parmesan Cheese
  • Salt & Pepper to Taste

Instructions

As an option and to prevent having a soggy bottom crust, you can par-bake your pie crust.  See your frozen pie crust instructions for a one layer pie. 

  1. Preheat oven to 400F.
  2. Place the tomato slices on the bottom of the pie shell in one or two layers, season with salt and pepper to taste.
  3. Spread the chopped green onions evenly over your tomatoes.
  4. In a bowl, mix the mayonnaise with the Parmesan cheese, spread mixture evenly over the tomatoes.
  5. Bake in oven until golden brown and bubbling, about 30-40 minutes.
  6. Let cool 15-20 minutes before slicing/serving.

I have a similar recipe. Instead of parmesan cheese, my recipe calls for 2 cups shredded gruyere cheese (I recently used a gruyere/swiss blend). A layer of diced, carmelized onions is the first "layer". The recipe I have also calls for 1/4 cup fresh, chopped basil (not green onion). I believe any way you make tomato pie, it will be great!

Only thing that makes this better is fresh torn basil in mayonnaise layer.

In your instructions you say that you spread the Parmesan and mayonnaise on top of the tomatoes, but in the pictures there are tomatoes on top. Please explain.

Hi Janet, thanks for this call out. It was a complete oversight. The tomato slices on top is a decorative garnish and is optional. Hope that helps.

Do you have any replacement ideas for mayonnaise in this savory tomato pie recipe? Sounds so yummy but my husband doesn’t eat mayonnaise.

The only thing I might swap with is equal parts sour cream, it may not offer the zing that mayo does, though so you might want to add extra seasonings. Let us know if you try it. ;)
