Grandma's Bisquick Cookies Recipe

There are so many wonderful things that I remember about my Gram. She was one of the most frugal people you would have ever met. But more importantly, she wasn't just cheap, she was truly resourceful. I didn't recognize some of these wonderful qualities until I was responsible for my own finances so many years later.

She admittedly wasn't a maven in the kitchen, but she sure knew how to use what she had on hand to make it all work.  When she took care of me from time to time without much warning, I remember her tuna casserole, frozen fish stick meals and these simple cookies she would make.

She used Bisquick and Country Time Lemonade and sadly, I never got her recipe... or even know for sure if she actually had one.

I just know they tasted yummy and made things better.

I hadn't remembered these for quite a long time and the other day they came to mind. It's amazing that such a simple cookie could inspire such wonderful memories and get me to try to re-create them.

While, I don't know exactly what measurements she used, they taste a lot like her special cookies.

I hope she is smiling down on this cookie recipe,  she will be missed... always!

Grandmas Company Cookie Recipe

Yield: 24
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

Delicious 4 ingredient lemon cookies made with bisquick.

Ingredients

  • 3 Cups of Bisquick
  • ½ Cup Butter or Margarine, softened (1 stick)
  • ½ Cup of Country Time Lemonade Mix, powdered
  • ⅓ Cup Granulated Sugar
  • 1 Egg
  • ¼ Cup Water
  • OPTIONAL ICING INGREDIENTS:
  • ½ Cup Powdered Sugar
  • 1 TBSP Water
  • ½ TBSP Country Time Lemonade Mix

Instructions

  1. Preheat your oven to 350°F
  2. Combine all of the ingredients with a mixer until fully combined. Dough will be very thick.
  3. Use a small cookie scooper to form cookies. Scoop each ball onto non-stick baking (or greased) sheet as is.
  4. Bake for 10-12 minutes. Makes about 24 small cookies or 12 large. Set on a wired rack until cooled.
  5. To make icing, combine all three icing ingredients together until blended. If the icing is too liquidy, add a little more powdered sugar and repeat until thickened. Drizzle over cooled cookies.

Oh I made thes an they are good! Tart next time I will try 1/2 the lemonade an maybe dissolve in the water first, very gritty an tart, I made the raspberry drink mix with fresh raspberries add San very good !! All just to tart an gritty, try to dissolve the drink crystals in the water maybe first an use 1/2 the amount too. 😊 that’s what I’m trying next time

I add a little bit of lemon zest to the cookies for a little more lemon taste .

What is Bisquik??? I'm in Australia and we don't have it. What could I use instead?

@Petra, Were you able to find a bisquick alternative? If not, here is a recipe for creating your own.

@Petra, Bisquick is a premixed/dry baking mix. Used primarily for biscuits.
