These precious Minnie Mouse Cupcakes are perfect for parties and for Valentine's day. Vanilla cupcakes are topped with buttercream frosting, pastel sprinkles and finished with a pretty pink and purple Minnie Sugar Cookie.

After a long holiday break, it's time to start thinking about Valentine's day ideas! What better way to celebrate the very sweetest holiday than with Minnie Mouse? If this this holiday had an ambassador or mascot, she would surely be it. I adore how these treats came out and I'm so excited to share just how truly easy they are to make!

These pretty pastel cupcakes are a part of a fun collab that I am doing with my friend Lisa over at Fabulous Habits. You may remember that we created some desserts together last Easter, too! I'm SO excited that we got together to brainstorm some fun Disney inspired recipes to share this time around. We're both HUGE fans, so it was only fitting... or magical, you might say!

When I found out what she was making, I got even more excited! So, today I'm finally STOKED to be able share what she created! You will instantly fall in love with her Yoda Cookies for Valentine's Day! Eek! I can hardly stand the cuteness! Make sure to visit her and show some extra love!

Now, let's get to making some Minnie magic!

MINNIE MOUSE CUPCAKES FOR VALENTINE'S DAY

With so many Minnie Mouse cupcakes ideas out there, it's hard to come up with something fresh and new. It took me about 4 tries before I came up with this exact outcome and it's just so simple but they really make me smile. I hope that you love them as much as I do.

Here is what you need to make them:

  • Prepared Vanilla Cupcakes
  • Prepared Pink Minnie Cookies with Purple Ribbon Icing Decor (Tips below)
  • Store-Bought Buttercream Frosting
  • Pastel Sprinkles

HOW TO MAKE MINNIE MOUSE CUPCAKES

You have so many options when it comes to preparing the base cupcakes for this. You can simply use store-bought cupcakes, make them from a boxed mix like I did or use any recipe of your choosing.

HOW TO CHOOSE STORE BOUGHT BUTTERCREAM

For easy frosting that can stand up, I recommend using Wilton's Medium Consistency Buttercream or your choice of other thicker frosting. Traditional store-bought cans of frosting will not hold up well for this particular cupcake idea. We need the frosting to be substantial in order to support the weight of the cookie on top. I also love the scent and taste of this product. It's become my favorite go-to for creating sharper looking cupcakes.

HOW TO MAKE MINNIE MOUSE SUGAR COOKIES

All you need to prepare these cookies are:
  • Store-bought Sugar Cookie Dough combined with ¼ Cup All Purpose Flour
  • Small Mickey Mouse Cookie Cutter
  • Pink Cookie Icing
  • Purple Ribbon Icing Decoration
Read my post here for the best tips on how to use store-bought sugar cookie dough with minimal spreading and to keep the Mickey shape. Once the icing is completely set, you can insert them into the top of your cupcakes.
 
Note: It's really important that you choose a small cookie cutter for this. You need the cookie to be as reasonable as possible in order for it to set securely on the cupcake. See the recipe box below for my favorite Mickey cookie cutter set for this. Be sure to use the smallest of the two in the set.

HOW TO FROST CUPCAKES THAT HAVE A COOKIE TOPPING

After experimenting with a few different icing tips, I have come to the conclusion that using an open star tip is the best method to support the cookie on top and also keep the shape of the icing. To sum it up, it leaves the frosting decoration soft enough for you to be able to press the cookie in, yet the frosting itself is thick enough for it to work. Be mindful that the larger and heavier the cookie, the less likely it will be to stay put on top. Try to keep your cookies thin and on the smaller side.

For these, I used my Wilton Dessert Decorator Plus with the tip and worked my way up in a circular motion with about four layers that get smaller as you work your way up.

Once you have the cookies set in the center of each cupcake, it's time to get your sprinkle on. I loved the pastel blend that I found at Walmart a while back (linked in recipe below). It has hearts in it making this extra perfect for this Minnie Mouse cupcakes recipe. I feel that less is more when it comes to sprinkles on this cupcake, so don't feel like you need to overdo it.

So far, I think these ideas for minnie mouse cupcakes are my very favorite! Simple but pretty! And the colors can be tweaked to match any Minnie Mouse party or celebration you have planned!

Minnie Mouse Cupcakes

Prep Time: 20 minutes
Total Time: 20 minutes

Pastel Minnie Mouse Cupcakes prepared with Buttercream and pretty sprinkles.

Ingredients

  • 12 Prepared Vanilla Cupcakes
  • 12 Minnie Sugar Cookies with Pink Icing & Purple Ribbon Icing Decoration
  • Wilton Buttercream Frosting, Medium
  • Pastel Sprinkles

Instructions

  1. Use an open star tip to pipe the frosting into 4 layers that gradually get smaller.
  2. Insert Minnie Mouse Cookies into the center of the frosting peak all the way to the cupcake base.
  3. Lightly add sprinkles to the frosting.
