With summer celebrations on the way, it's always a help to have the perfect go-to side dishes. Fluff Salad is one of those favorites. Today I'm putting a very surprising crunchy twist on this classic favorite. The best part is that it's so easy to make and I have a pretty good feeling that friends and family will be asking for your recipe before the party is over. I've been living in Florida for a year and half already, time really flies! One of the things I love the most about living somewhere completely new is getting to experience new things. From destinations all the way to the glorious fresh produce here! And, can someone say palm trees? Last month, I attended the Food & Wine Conference in Orlando which is a remarkable event for food bloggers to learn and try new things. One of the sponsors that caught my attention quickly was Dandy® Fresh Fruits & Vegetables.

They hosted things like afternoon snacks, stunning desserts and the most glorious brunch. Mmm mmm. Dandy® is headquartered in Central Florida and they have been farming celery in the area for 5 generations. It just so happens that celery is their most successful crop and I agree, it's delicious. They grow it as sweet as possible for the perfect celery snack that we all love. They kindly sent me some of their fresh-cut celery and it was just perfect. Full of moisture and not bitter, exactly the fresh kind of go-to snack I'd want to keep stocked on.

Now, peanut butter is definitely the #1 thing I like to enjoy with my celery. I couldn't help but to think that a dessert made with peanut butter and celery would be the exact perfect combo and I was right. This unusual Peanut Butter Fluff Salad is made with chopped celery and apples for the perfect crunchy bite. Who said you can't eat veggies for dessert?

So, let's get started. First thing I did was chop the apples, skin on and immediately put them into a salt soak for 5 minutes. I used approximately 2 cups of cool water and 1 teaspoon of kosher salt. Then rinse them really well to remove the salt to preserve the apples, a colander is really helpful for this. While the apples are soaking, it's a great time to chop the Dandy® Celery Sticks. We need about a cup for this fluff salad recipe. Once the produce is set, in a large mixing bowl add the whipped topping, peanut butter and pudding mix and hand mix until it's completely blended and all of the celery and apples are covered. Lastly stir in the mini marshmallows and peanuts. Transfer the salad into a serving bowl. Then, refrigerate for about 3 hours or overnight before serving.

If you're hosting a fancier summer soirée, you can make an inspired celery garnish to serve on mini parfaits. Simple slice celery stalks into thin strips and then cut into smaller pieces.

Dandy Surprise Peanut Butter Fluff Salad

Ingredients

  • 16oz Tub of Whipped Topping
  • 1 Cup of Creamy Peanut Butter
  • 3.4 oz of Instant Vanilla Pudding Mix
  • 1 Cup of Celery (Dandy brand), finely chopped
  • 1 Red Apple such as Fugi
  • 1 Granny Smith Apple
  • 1 Cup of Mini Marshmallows
  • ½ Cup of Dry Roasted Peanuts, chopped

Instructions

  1. Chop the apples, skin on and put them in a salt soak for 5 minutes. Approximately 2 cups of cool water and 1 teaspoon of kosher salt, then rinse well to remove the salt to preserve the apples.
