Inexpensive Slow Cooker Salsa Verde Chicken

Loving cooking in my slow cooker with the cooler weather here. Who am I kidding... I love cooking in it anytime. But... I have been trying to find go to recipes that are really simple and I've found another combo that totally works.

A while back I shared this easy 3 ingredient slow cooker recipe for fiesta chicken which is a big hit around here.  That recipe calls for chicken, salsa and cheddar soup. Doesn't get more simple than that.

This Salsa Verde Chicken recipe had a few more ingredients, but they are all super simple to toss together. This delicious dish is perfect for switching up Taco Tuesday, celebrating Cinco de Mayo and basically to make any night of the week a lot more tasty.

– Boneless Chicken Breasts – Sliced Sweet Onions – Salt & Pepper – Fresh Minced Garlic Cloves – Cumin – Lime Zest – Chili Powder – Green Chiles, Canned – Salsa Verde – Fire Roasted Tomatoes

Ingredients 

– You will need a slow cooker to make this recipe. I used a 3 quart size.

HOW DO I STORE THIS RECIPE? – You can store this chicken recipe in the fridge in an air tight container or your slow cooker pot itself for up to 3 days.

1. Place chicken, tomatoes, green chiles, salsa verde, garlic, onion, cumin, lime zest, chili powder, salt and pepper in your slow cooker. Cook on low for 5-6 hours or on high for 3-4 hours.

STEP 2: 

Once the chicken is cooked through, remove from the slow cooker and shred with two forks. Place chicken back in the slow cooker and stir.
