Vegetable Train
This adorable veggie train is made from colorful bell peppers filled with fresh vegetables like broccoli, cucumber, carrots, and tomatoes.
Ingredients
- Bell peppers in assorted colors
- Broccoli florets
- Carrot sticks or slices
- Celery sticks
- Grape tomatoes
- Cucumber slices
- Spinach dip or any dip
- Optional: cream cheese or toothpicks
Instructions
- Cut the sides off the bell peppers and remove the seeds and membranes to create little “train cars.”
- Fill each pepper with a different vegetable (broccoli in one, carrots in another, celery in another, and cherry tomatoes in another.)
- Arrange the filled peppers in a line on a serving tray to look like a train.
- Use cucumber slices as wheels by placing them along the sides of each pepper. Use cream cheese or toothpicks to help them stay if desired.
- Add a bowl of spinach dip at the front or side of the display to make it a dipping station.
- Serve immediately and enjoy as your movie night snack.
