Slow Cooker Double Thick Baked Potato Soup

It has been so chilly here so early in the season. We have been enjoying wonderful warm meals made in the slow cooker. This time I made a double thick Potato Soup in my slow cooker. Boy was it yummy!

Very filling meal that's very satisfying and can be topped with all your favorite fixings for the perfect customized meal that everyone will love.

This isn't your typical potato soup, it's actually much thicker and heavier. If you're not into extra thick and creamy soups, this is not the one for you.

However if you're like me and are obsessed with anything that has to do with cheesy potatoes, this will be love at first bite.

BAKED POTATO SOUP INGREDIENTS

The ingredients are pretty simple, here is a sneak peak. Make sure to scroll down to print the full recipe with measurements.

  • Baking potatoes
  • Condensed cream of mushroom soup
  • Green onions
  • Garlic powder
  • Ground red pepper
  • Shredded sharp Cheddar cheese
  • Sour cream
  • Whole Milk
  • Black Pepper
  • Bacon (Garnish, optional)

Slow Cooker Double Thick Baked Potato Soup

Yield: 4
Prep Time: 30 minutes
Cook Time: 4 hours 10 minutes
Total Time: 4 hours 40 minutes

Ingredients

  • 2 pounds baking potatoes, peeled and cut into ½-inch cubes

  • 2 cans (10½ ounce size) condensed cream of mushroom soup

  • 1 ½ cup finely chopped green onions, divided

  • ¼ teaspoon garlic powder

  • ⅛ teaspoon ground red pepper
  • 2 cups shredded sharp Cheddar cheese, divided

  • 1 cup sour cream (Can swap this out for ½ cup of milk)

  • 1 cup milk (I used skim - worked great)
  • black pepper
  • bacon (Garnish, optional)

Instructions

    Combine potatoes, soup, 1 cup green onions, garlic powder and red pepper in slow cooker. Cover; cook on LOW 8 hours or on HIGH 4 hours.

    Add 1 ½  cups of cheese, sour cream and milk; stir until cheese has completely melted. Cover; cook on HIGH 10 minutes.

    Season to taste with black pepper. Garnish with remaining cheese, bacon, and green onions.

Soup is almost finished and I took a bite and it seems as though it may be a bit bland. Any idea on how to add more flavour ?

@Cheryl, as long as the measurements are the same, I don't see a problem with it. Might throw the flavor a bit though.

I am so ready for soup weather! I love potato soup and making it in the slow cooker is awesome! I love fix it and forget it meals! Looks yummy!
