To make this rainbow Rice Krispies bundt cake, you will also need the following supplies: 

MAKE A RAINBOW CAKE WITH RICE KRISPIES

Give your 10" bundt cake pan a little spritzing of non-stick cooking spray, and set it to the side for later - you'll be ready in no time!

Next, give your marshmallows an exciting burst of flavor by coating them in melted butter and microwaving them on high heat. Let the decadent treat cook for 90 seconds, then stir thoroughly to make sure all are melt-tastic! If you still see a few resisting change, add another 30 seconds of microwave time and give 'em one more good mix, they're guaranteed to be richly gooey after that.

In a medium-sized bowl sprayed with nonstick cooking spray, measure out 89 grams of gooey melted marshmallows. Then it's time to get creative by adding some food coloring! Stir the mixture well and if needed, pop into the microwave for 20 seconds to ensure complete color coverage.

Using the food scale, measure out 41 grams of Rice Krispies and add them to the red marshmallow mix. Use a spatula coated well in non-stick cooking spray to mix this well. When the Rice Krispies are coated well in red marshmallow mixture, spray your clean hands well with then non-stick cooking spray and press the red mixture into the bundt cake pan. Spread it out in an even layer as best you can. Don't worry if any of the layers are a little imperfect, it will add a bit of character.

Then, clean out and dry bowl to refresh for the next color Then move onto the orange layer by spraying the bowl well with non-stick cooking spray, adding in 89 grams of melted marshmallow, orange food coloring mixed well with the marshmallows then 41 grams of Rice Krispies mixed well with the orange marshmallow mixture.

Spray your hands well with non-stick cooking spray and use them to spread the orange layer evenly on top of the red layer.

In between each color layer, be sure to wash and dry your bowl well and then repeat the steps for yellow, green, blue and lastly purple.

Once the layers are all finally added in, cover your bundt pan in plastic wrap. Let it sit at room temperature for an hour before cutting or serving.

The type of food coloring used is important. For these bright colors, I used the brand Chefmaster Liqua-gel in the colors: super red, neon brite orange, lemon yellow, leaf green, neon brite blue and neon brite purple.

DO YOU REFRIGERATE HOMEMADE RICE KRISPIES TREATS?

Does this rainbow Rice Krispies bundt cake need to be refrigerated?

No, refrigerating this cake dries it out. This is best stored at room temperature for up to 3 days. If you do want to refrigerate leftovers, bring back to room temperature before serving.

Gorgeous Rainbow Rice Krispies Cake made with just 4 ingredients in a bundt pan. Bright and colorful dessert that's perfect for any celebration.

Ingredients

  • 10 cups Rice Krispies cereal (250 grams)
  • 18 ounces large marshmallows (about 70 large marshmallows)
  • 5 tablespoons (70 grams) unsalted butter, melted
  • gel food coloring: red, orange, yellow, green, blue, purple*

Instructions

Spray a 10” bundt cake pan well with non-stick cooking spray. Set aside.  

In a large bowl, toss marshmallows with melted butter then place in microwave on high heat for 90 seconds. Stir well. If all marshmallows have not melted, heat for an additional 30 seconds then stir well again. 

In a medium sized bowl sprayed well with non-stick cooking spray, use a food scale to measure out 89 grams of melted marshmallows into the bowl. Color the marshmallows red and stir well until all of the food coloring is mixed with the melted marshmallows**. If the color isn’t mixing well because the marshmallows have started to cool, pop it into the microwave to heat for 20 seconds. 

Using the food scale, add 41 grams of Rice Krispies to the red marshmallow mix. Use a spatula coated well in non-stick cooking spray to mix this well. When the Rice Krispies are coated well in red marshmallow mixture, spray your clean hands well with non-stick cooking spray and press the red mixture into the bundt cake pan. Do your best to spread it out in an even layer. 

Wash and dry the marshmallow bowl well then move onto the orange layer by spraying the bowl well with non-stick cooking spray, adding in 89 grams of melted marshmallow, orange food coloring mixed well with the marshmallows then 41 grams of Rice Krispies mixed well with the orange marshmallow mixture. Use your hands, sprayed well with non-stick cooking spray, to spread the orange layer evenly over the red layer. Wash and dry the marshmallow bowl well the repeat the steps for yellow, green, blue and lastly purple. 

Once all the layers are complete, cover the bundt pan with plastic food wrap and let sit at room temperature for 60 minutes before cutting into slices. 

Notes

Store covered in a food storage container at room temperature for up to 3 days.  

* Gel food coloring works best instead of water or oil based food coloring. For these bright colors, I used the brand Chefmaster Liqua-gel in the colors: super red, neon brite orange, lemon yellow, leaf green, neon brite blue and neon brite purple.

** It is important that the marshmallows are colored completely before adding in the Rice Krispies. Do not add food coloring directly onto the Rice Krispies – add it into melted marshmallows only and stir well to completely mix in the color before stirring in the Rice Krispies. 

*** It is important to use a food scale with this recipe so you can evenly layer the different colors. 

**** This is a sticky process and recipe so be generous with the non-stick cooking spray.
