Sweet Apple Chicken Sausage Stuffed Acorn Squash
It's hard to believe that fall is almost here! But, I'm not complaining. I'm definitely looking forward to even the slightest break in the heat. Some of my very favorite flavors of fall come together in this Stuffed Acorn Squash recipe that I'm sharing today. Think apple flavors, golden raisins and a dash or two of cinnamon! I've been challenged to swap al fresco's All Natural Chicken Sausage for chicken in one of my go-to recipes. Mission accomplished and I'm so excited with how the flavors all worked together in this surprising fall twist. I was quite literally delighted to spot their Sweet Apple Chicken Sausage to include in this yummy swap out. With the flavor of maple syrup and real apples, this variety sounded so intriguing and beyond perfect for the kind of fall meal that I wanted to make.
What makes their chicken sausage extra amazing is that it comes fully cooked and ready for your delish dinner creations. If you're anything like me, I'm always kind of stoked about these kind of meal hacks. With SO many flavors of al fresco Chicken Sausage to choose from like Roasted Garlic and Spicy Jalapeno, you can get over-the-top creative with dinner with pretty much no effort. And...that's just my style.
Stuffed Acorn Squash for Fall
To make this yummy autumn inspired stuffed acorn recipe, I started out by cutting acorn squash in half and scooping out the seeds. Then a brush or drizzle of olive oil goes on top finished with a dash of salt and sprinkle of brown sugar. Sounds good already, doesn't it? While the squash is baking, it's time to whip up the totally unique and delicious filling.
Now, don't ask where I came up with this original recipe, but I will tell you that I'm sure glad that I did. My whole family absolutely loves it and it's beyond simple to make. My original recipe calls for cooked chicken, so for this challenge, I swapped that out for Sweet Apple Chicken Sausage sliced into bite sized pieces. Then with the help of ready-made alfredo sauce, parmesan cheese and golden raisins blended together the stuffing will come together in just minutes. Once the acorn squash is cooked, we'll stuff them and put them back into the oven for a bit until the stuffing is warmed and the cheese is melty. The last step is to sprinkle some cinnamon over the top. It's oh-so-good, so don't skip it.
Sweet Apple Chicken Sausage Stuffed Acorn Squash
Ingredients
- 2 Acorn Squash (Large)
- 4 (1 pk) al fresco Fully Cooked Chicken Sausages (Sweet Apple Flavor), chopped
- 1 Cup of Shredded Parmesan Cheese
- 1 Cup of Alfredo Sauce
- 2 Tbsp of Golden Raisins
- Sprinkle of cinnamon
- Sprinkle of brown sugar
- Sprinkle of sea salt
- Olive oil
Instructions
- Preheat your oven to 375°F. Cut two large Acorn Squash in half and scoop the pulp out. Brush with olive oil and sprinkle with a little salt and brown sugar. Place in a baking dish and cook in the oven for an hour. While they're baking, mix the fresco chicken sausage with Alfredo Sauce, shredded Parmesan cheese and 2 tablespoons of golden raisins and set aside. When the squash is done baking, it's time to pull them out and scoop the filling in. Seal the deal with a tiny dusting of cinnamon on top and return to the oven for 15 minutes or until chicken is warmed through and cheese is melted. Enjoy!
Then, dig in! The sweet apple and maple flavors in the chicken sausage tickles the taste buds and is complimented by hints of brown sugar and cinnamon in this recipe.
The final results of my challenge? Amazing. Color me officially impressed. I'm really glad that I was inspired to think outside of the box, the fully cooked Sweet Apple Chicken Sausage from al fresco really took this recipe over the top!
