Ham & Cheddar Slow Cooker Breakfast Casserole

Ingredients

  • 32 ounces Hash Brown Shredded Potatoes
  • 1 (10.5oz)can Cheddar Cheese Soup
  • ½ cup (1 stick ) unsalted Butter
  • 16 ounces Ham Chunks
  • 2 cups Shredded Cheddar Cheese
  • 18 Eggs
  • Salt & Pepper
  • Chives (for topping)
  • Optional: Crock Pot liner
  • Cooking spray (if desired)

Instructions

    In a mixing bowl, mix the eggs, cheddar cheese soup, few dashes of salt and pepper.

    Line the crock pot with a liner or you can use cooking spray. 

    Layer half of the hash brown potatoes into the crock pot and half of the ham chunks.

    Spread thinly sliced portions of ½ stick of butter. 

    Sprinkle ¾ cup of shredded cheese evenly. 

    Pour ½ of the egg mixture evenly over this layer. Repeat making an additional layer.

    Make holes with a knife allowing the eggs to drain down into the crock pot.

    Set the crock pot on low for 7-8 hours. Top with additional ½ cup shredded cheese and allow to melt prior to serving.
