Ultimate Cheddar Mashed Potatoes

Mashed potatoes have always been one of my very favorite foods. As a child, everyone knew I adored them and made sure I always had a lion's share. Not much has changed since those days, that's for sure. Today, I'm sharing my own unique but simple recipe for green onion and cheddar mashed potatoes in time for holiday meal planning.

Some of my fondest memories of the holidays include watching one of my grandmothers prepare this wonderfully creamy holiday must-have. It brings back some truly wonderful moments.

These potatoes are so simple, but so packed with flavor. They're sure to be a crowd pleaser.

Cheddar Mashed Potatoes

Yield: 6
Prep Time: 5 minutes
Cook Time: 15 minutes
Additional Time: 3 minutes
Total Time: 3 minutes

Upgraded cheddar mashed potatoes made with extra sharp cheddar cheese, garlic and sour cream.

Ingredients

  • 2 lbs of Russet Potatoes, peeled and cut into even chunks
  • 2 cups of Shredded Extra Sharp Cheddar Cheese (Divided)
  • 1 Clove of Garlic, finely chopped
  • 5 TBSP butter
  • ⅓ cup milk
  • ¾ cups Sour Cream
  • ½ tsp. salt
  • 1 pinch ground black pepper
  • Garnish: 1 Tbsp. of sliced Green Onions & more sour cream

Instructions

  1. Cover potatoes with water in 2-quart saucepan.
  2. Bring to a boil over high heat. Reduce the heat to low and simmer uncovered until potatoes are very tender, about 15 minutes; drain. 
  3. Return potatoes to saucepan; mash and stir in the garlic, butter, milk, sour cream, 1 cup of the cheddar cheese, salt & pepper.
  4. Transfer mashed potatoes to a small casserole dish. Evenly top with remaining cheddar cheese and broil until melted. (about 3 minutes on low broil)
  5. Top with chopped green onions and sour cream before serving.

  2. I'm not sure I have a favorite recipe for them. I'm not picky, I'll eat them any way, especially with a melted dollop of Country Crock.

    1. You can't really go wrong with mashed potatoes, can you? They are just so delicious just about any way you serve them. Melted Country Crock totally works for me!
