Easy French Toast Cup Recipe

Hungry for something fun for breakfast? As you know, I’ve been obsessed with stuffing things into muffin tins and baking them up. When I was at the grocery store the other day grabbing some frozen pancakes, I had a “oh yeah” moment when I spotted the frozen french toast. It may be the last freezer breakfast item that I haven’t crammed into my tin for a recipe to date. Well, I did it! Total yums! So good and I just can’t decide which is my favorite between the French Toast, Waffles or Pancake cups.  I guess it’s good that I don’t really have to choose because they are all fun and yummy.

My hubby can’t imagine breakfast without eggs so these cups really come in handy. I’m always trying to beat the breakfast boredom by trying new ways to prepare and serve eggs.  We do omelets, boiled, scrambled… it seems there is only so much you can do day in and day out. So, that’s why these cups help break it up around here!

Also, I finally had a good deal of company over the last week, was super excited to serve up my experimental cups for breakfast and they were a very big hit! Both kids and adults seem to really enjoy eating breakfast in cup form.  Such a simple way to make the morning a little more fun, and you know that is what I am all about!

Seriously, if you haven’t baked something in muffin tins besides muffins… you are really missing out on a world of fun! With pre-made breakfast items, you can throw together a bit of awesome-ness is about 15 minutes. How can you say no to that?

Easy French Toast Cup Recipe

Prep Time: 5 minutes
Cook Time: 21 minutes
Total Time: 26 minutes

Breakfast idea that is easy enough to enjoy any day or fancy for a special brunch, too.

Ingredients

  • 12 Slices of Frozen French Toast (I used Aunt Jemima Brand)
  • Non-stick cooking spray

Instructions

    Preheat your oven to 375. Defrost/warm desired amount of frozen french toast in a microwave. Be sure not toast or they will not be pliable. Spray your muffin tin with non-stick cooking spray. Press each piece of french toast delicately and evenly into the center of your muffin tins. Press the sides back gently to form a cup. Cook for 14-16 minutes until crisped. Cool and remove. Add anything you'd like to your cups.

    I filled mine with scrambled eggs, cheddar cheese and bacon.

    Top with pancake syrup if desired.
