It’s spring time and my favorite time of the year to enjoy brunch between and special breakfast recipes with May Day and Mother’s Day, yum.  I have been experimenting with all different types of food recipes baked in muffin tins. I just think it’s that fun, now that I am all grown up… I can play with my food, right?  Waffles toast up really nicely in the oven to form these awesome portable cups. The possibilities of fillings are endless, add eggs, cheese, sausage or bacon. You can also make a dessert with them with pie filling, ice cream or whipped cream. Making me hungry as I type this! Now, I am going to have to head off to the grocery store to get some more delicious fillings to try out. Don’t worry, I will definitely share if it comes out yummy!

What I love about these is that they are just so easy but add a serious element of fun for breakfast for a special occasion or simply any day. My hubby and son really appreciate the change of pace when I experiment in the kitchen, so it’s well worth the extra few minutes to make these types of things.  Hoping you will try and enjoy as much as we do!

Waffle Cups Recipe

Prep Time: 5 minutes
Cook Time: 14 minutes
Total Time: 19 minutes

Fun brunch recipe make with frozen waffles. Perfect to hold breakfast fillings like eggs and waffles.

Ingredients

  • 12 Frozen Waffles (I used store brand)
  • Non-stick cooking spray

Instructions

    Preheat your oven to 375. Defrost desired amount of frozen waffles or microwave, do not toast or they will not be pliable. Spray your muffin tin with non-stick cooking spray. Press each waffle delicately into your muffin tin. Cook for 12-14 minutes until crisped. Cool and remove. Add anything you'd like to your waffle cups.


    I filled mine with scrambled eggs and cheddar cheese.


    Top with pancake syrup if desired.
