Easy Over The Top Fish Sandwiches

Enter over-the-top fish sandwiches made with garlic bread and piled high with red bliss potato salad and garlic mayo. I'll tell you just how to make this layer by delicious layer and you'll be shocked at how easy it is for a quick family dinner with my easy shortcuts! With kids back in school and the thought of the holidays approaching, getting meals on the table can feel overwhelming. I'm always chatting about how to make it all work even during the most hectic of times. This scrumptious dinner idea totally fits the bill. You can even set out all of the ingredients and let everyone make their own delish creation. This tasty party starts with Gorton's products.
For a real authentic fish and chips classic taste, I wanted to use Gorton's Beer Battered 100% Real Fish Filets and to take this over the top, I garnished each sandwich with Gorton's Popcorn Shrimp. Are you feeling hungry yet? What I love most about this sandwich is the classic goodness with throwback flavors but taken to the next level with the perfect add-ons and ingredients.
Over The Top Fish Sandwich Recipe
While we're in the chaos of setting up our new home and giving it some fixes, easy meal solutions like this are going to be even more of a mainstay. I hope you love this one as much as we do! This recipe makes four sandwiches but it's super easy to make more or less depending on your family size.
First, let's make some quick and simple garlic mayo. Mix together four tablespoons of your favorite mayonnaise along with a ½ teaspoon of minced garlic, squeeze of lemon juice and dash of salt and pepper to taste. Set aside in the refrigerator while you make the rest of this yummy recipe.
For this recipe, I used store-bought freezer garlic bread. I put those to bake according to package direction first. Set the prepared bread aside. Then, onto garnish prep! Bake up your desired amount of Gorton's Popcorn Shrimp for your garnish. I planned for two shrimp for each sandwich. Then, I stacked them onto a toothpick. Set aside until the main ingredient is baked up.
Lastly, bake Gorton's Beer Battered Fish Filets according to the package directions. I used two filets on each sandwich totalling eight for this recipe. After those are baked, it's sandwich making time!
For maximum yum time, here's how I layered these sandwiches from the bottom up:
- Slice of Garlic Bread
- Lettuce
- Red Bliss Potato Salad
- (2) Gorton's Beer Battered Fish Filets
- 1 Slice of Extra Sharp Cheddar Cheese
- Garlic Mayo
- Garlic Pickles
- Slice of Garlic Bread
- Finish with garnish made with Gorton's Popcorn Shrimp

Easy Over The Top Fish Sandwiches
Ingredients
- 8 Pieces Gorton's Beer Battered Fish Filets, prepared according to pkg directions
- 8 Pieces Frozen Garlic Bread, prepared according to pkg directions
- 4 Slices of Extra Sharp Cheddar Cheese
- 2 cups of red bliss potato salad, store-bought prepared
- 8 Garlic Sandwich Style Pickles
- Garlic Mayo:
- 4 TBSP Mayo, ½ TSP Minced Garlic, Squeeze of Lemon Juice + Salt and Pepper to taste
- Optional Garnish:
- 8 Gorton's Popcorn Shrimp, prepared according to package directions
Instructions
- First, prepare the garlic mayo. Mix together mayonnaise, minced garlic, squeeze of lemon juice and dash of salt and pepper to taste. Set aside in the refrigerator.
- Optional Garnish: Bake up your desired amount of Gorton's Popcorn Shrimp. Then, stack them onto a toothpick to place on top of the sandwich.
