Did you know that today is National Ice Cream Pie day? Oh yes it is. Such a shame that I've missed it so many years before. But not to fear, I'm on it this time. Any ice cream treat is only as delicious as the ice cream itself. I've made plenty of ice cream in the past, but with the help of Ginny's I got to make my own in their ice cream maker for the first time.  The machine comes with recipes including one for strawberry ice cream, so that's where the idea for this ice cream pie came in.  If you don't have a maker yet, you can use store bought ice cream for this recipe too.

To make the Strawberry ice cream recipe, it starts out with a cup of fresh mashed strawberries. This also gave me a chance to use my new Cake Boss measuring set from Ginny's. They are so cute and sturdy too.  It's the little things in the kitchen 😉

When making the ice cream, you add all of the ingredients in a seperate bowl. The bowl needs to be refrigerated for about an hour before adding it to Ginny's ice cream machine. {And, seriously. How cute are these Cake Boss Bowls?}

The maker is really easy to use. You store the bowl in the freezer in advance so that it's ready when you're ready. There is a simple attachment that goes on top of the bowl. That's how the magic happens. It is truly magic, I'm already addicted. Oh, the possibilities.

To get ready to put together my ice cream pie, I used the 8.5" cake pan from this Cake Boss 6 Piece Non Stick Professional Bakeware Set. I lined the pan carefully with heavy duty plastic wrap. If you want to be able to remove the pie, you'll need to do something like this. All you have to do is pull the sides of the plastic once the pie is frozen to pull it out of the pan. If you prefer to slice and serve right from the pan, you can skip it.

Once the ice cream was done churning, I added pound cake chunks. I took about half of a small pre-made pound cake and cut it into chunks... approximately 1.5 cups worth. I gently added the chunks to the ice cream mixture, just enough to cover and poured it into my prepared cake pan.

Next up! I spread a container of whipped topping over the top.

For an added touch, I used some sprinkles and a few pound cake chunks for decor. So easy and pretty too!

Then, it needs to be stored in the refrigerator for a couple of hours to firm everything up before serving!

For an added touch, I drizzled some strawberry sauce over individual slices to try out this Prepara Prep & Deco Bottle. I've been needing something like this in my kitchen. It has a good amount of control for perfect drizzling.

Strawberry Shortcake Ice Cream Pie Recipe

Ingredients

  • 3 Cups of Strawberry Ice Cream
  • 12 oz Container of Whipped Topping
  • ½ Small Pre-Made Pound Cake Fresh or Frozen, Cut into Small Chunks

Instructions

  1. Soften the strawberry ice cream until it's spreadable. Prepare an 8.5" cake or high pie dish. Line with plastic wrap if you plan on removing it from the dish. Once ice cream is softened, gently stir in pound cake chunks until covered. Spread ice cream mixture evenly into the bottom of your pan or dish. Add whipped topping and spread evenly over the top. Freeze for about 2 hours or until firm before serving. Enjoy!
