HOW TO BUILD A TAQUITO PLATTER
Now that you have your ingredients ready, it's time to put together this yummy tray.
Start by preparing a box of El Monterey® Chicken & Cheese Flour Taquitos.
While they are baking, on a large platter, place down your choice of lettuce. I love green lettuce for this because it's so pretty.
Once the taquitos are prepared, add them to the center of the bed of lettuce.
Start filling in all the space around the taquitos with chopped and prepared ingredients such as rice, corn, beans and fresh veggies.
Once everything is in place, go in with some fun garnishes on top of your taquitos and all around. Think jalapeño slices, lime wedges and slices, fresh cilantro and sweet peppers.
Finally, drizzle a little dressing if you like, and add a little queso fresco if you're feeling fancy.
Taquito Platter Dinner
Easy family-style taquito platter made with simple ingredients including El Monterey® Chicken & Cheese Flour Taquitos, ready-to-eat rice, canned corn, black beans, and fresh toppings.
Ingredients
- 1 Package of El Monterey® Chicken & Cheese Flour Taquitos, prepared according to pkg directions.
- ½ Head Green Lettuce Leaves
- 1 Can Fire Roasted Canned Corn, drained
- 3 Cups of Prepared Rice
- 1 Can of Seasoned Black Beans, drained
- 2 Cups Shredded Cheddar Cheese
- 2 Avocados, Sliced
- 1 Pin of Grape Tomatoes, sliced in half
- ½ of a Red Onion, diced
- OPTIONAL GARNISHES AND ADD ONS:
- Limes, wedgies and or slices.
- Fresh Cilantro, chopped
- 1 Jalapeño, sliced
- Guacamole
- Salsa
- Sour Cream
- Dressings
Instructions
- On a large platter, place down your green lettuce leaves to cover.
- Add cooked Taquitos to center of the bed of lettuce.
- Fill in all the space around the taquitos with all of the chopped and prepared ingredients such as rice, corn, beans and fresh veggies. Alternate them for maximum color.
- Once everything is in place, add garnishes and dressings if you like.
Voila! You now have a gorgeous meal for any night of the week!
