This classic potato salad recipe will bring you back to childhood. Loaded with chopped onions, celery and boiled eggs and seasoned perfectly with mayo, mustard, sweet relish and celery seeds.

Ingredients

  • 4 lbs yellow potatoes, cooked (peeled and cut into ½ inch cubes)
  • 1 ½ cup mayonnaise
  • 1 cup sour cream
  • ⅓ cup sweet relish
  • 1 tablespoon yellow mustard
  • 2 tablespoons celery seed
  • ½ tablespoon garlic powder
  • 6 boiled eggs, peeled and diced
  • ½ red onion, diced
  • 2 celery ribs, diced
  • salt and pepper to taste
  • paprika for garnish (optional)

Instructions

1. In a medium bowl combine mayonnaise, sour cream, relish, mustard, celery seed, and garlic powder until smooth.

2. Stir in eggs, onion, and celery until well combined.

3. In a large bowl add the mixture to your potatoes and toss until all potatoes are thoroughly coated. 

4. Add salt and pepper to taste and place the potato salad covered into a refrigerator to chill for at least 1 hour.

5. Serve chilled.
