Breakfast is one of my very favorite meals and with spring here there are a lot of occasions to make it extra special.  There are May breakfasts and Mother's Day brunches to plan!

I recently spotted a mouth-watering Cheddar, Bacon & Onion Tart.

It inspired my Cheesy Bacon & Chives Omelet Cups Recipe today.

My husband and I started enjoying Extra Sharp Cheddar quite some time ago and we haven't looked back since.

It's still my very favorite, especially when paired with egg recipes.

Cheesy Bacon & Chives Omelet Cups Recipe

Yield: 9
Prep Time: 10 minutes
Cook Time: 18 minutes
Total Time: 28 minutes

Easy omelet cup recipe with cheddar cheese, bacon and lots of chives.

Ingredients

  • 10 Medium Eggs
  • 6 Thick Slices of Pre-Cooked bacon chopped or crumbled
  • ¾ Cup of Chopped Yellow Onion sliced (approx ¼ medium onion)
  • 2 Tbsp. Margarine melted
  • ⅛ Cup Chives finely chopped
  • ¼ cup water
  • 1 Cup Shredded Cheddar Cheese
  • salt & pepper to taste

Instructions

  1. Preheat your oven to 375°.  
  2. Spray a standard muffin tin with non-stick cooking spray generously.
  3. In a large bowl, beat the eggs until blended.  
  4. Add the remaining ingredients and blend again.
  5. Evenly pour mixture into muffin cups.
  6. Bake for approximately 16-18 minutes or until the egg is cooked through.

  3. You said one is a serving at 355 calories, yet you have two(on the plate just below the nutritional values) which is 710 calories. I'm not criticizing you just pointing out something you could change.

  7. These look really good. I love a quick and easy breakfast. We only use Sargento cheese, we always have shredded Sharp Cheddar and slices in the fridge.

  8. Oh yummy I have been looking for some new egg muffin recipes to help me with my Weight Watchers breakfasts. Mine were just ham and cheese or bacon and cheese.I am going to have to try this. I have not used onions in the egg muffins yet.
