Did you know that September is National Family Meals month? I didn't either, but it's a pretty awesome movement. You always hear me talking about ways to squeeze in easy home cooked meals for my family (enter Bacon & Cheddar Omelet Cups). But, it's one of the biggest challenges that I face here at home.

The thing is, growing up, we ate almost every single meal together as a family.  It's literally woven into my very being. I'm not alone in my struggle to rally up the family for a meal, are you in those shoes too?

As a part of this mission, I made an easy breakfast solution for my own family using Hormel Black Label® Bacon which is extra thick quality bacon.  Making Bacon & Cheddar Omelet Cups is just so easy and everyone is sure to love them. Plus you can make multiple batches that can be warmed any day and even frozen for extra busy mornings.

Ingredients:

  • 10 Medium Eggs
  • 6 Thick Slices of Pre-Cooked Hormel Black Label bacon chopped or crumbled
  • 2 Tbsp. Butter Margarine melted
  • ¼ cup water
  • 1 Cup Shredded Cheddar Cheese
  • salt & pepper to taste

Directions: 

Preheat your oven to 375°.  Spray a standard muffin tin with non-stick cooking spray generously. In a large bowl, beat the eggs, butter or margerine, water and salt & pepper until blended.  Gently stir in the remaining ingredients. Evenly pour mixture into muffin cups - about ¾ths of the way full. Bake for approximately 16-18 minutes or until the egg is cooked through. Cool and remove omelet cups from the muffin tin. Serve.

So easy to make!

Bacon & Cheddar Omelet Cups

Yield: 6
Prep Time: 10 minutes
Cook Time: 16 minutes
Total Time: 26 minutes

Easy breakfast omelets with bacon and cheddar cheese.

Ingredients

  • 10 Medium Eggs
  • 6 Thick Slices of Pre-Cooked Hormel Black Label bacon chopped or crumbled

  3. These would be the perfect breakfast for my husband. He is a huge bacon fan so I have a feeling he would love these.

  4. This recipe idea looks so easy and can be put in the oven to bake before the kids even wake up for school. I believe everything is also gluten free which means my husband can enjoy them too!

  5. My daughter has grown up and moved out on her own so family meals don't happen too often anymore but they are something I look forward to when my daughter comes to visit. I love your recipe and will have to make it on Saturday to celebrate International Bacon Day.
