CARAMEL STUFFED CHOCOLATE CHIP COOKIES RECIPE

I'll be up front and tell you sometimes the yummy caramel oozes out of the cookies and they don't look picture perfect. That is what I kinda love the most. They are so drool-worthy and inviting.
CARAMEL STUFFED CHOCOLATE CHIP COOKIES INGREDIENTS
These amazing cookies are made with only 5 ingredients. You won't even believe it! Here is the super short list of ingredients:
- Creamy Peanut Butter
- Granulated Sugar
- Large Eggs
- Semi-Sweet Chocolate Chips
- Werther's Original Soft Caramels
HOW TO MAKE CARAMEL STUFFED CHOCOLATE CHIP COOKIES
Making these cookies is such a breeze. In just minutes, you can have the easiest caramel stuffed cookies loaded with way too many chocolate chips.
The first step is to heat your oven and mix up the cookie base in a bowl.
That includes the creamy peanut butter, the sugar on eggs. I recommend doing this by hand to prevent over-mixing which is one of the biggest issues people have when making cookies like these.
This should only take about 30 seconds to combine everything. Once that is mixed, fold in the chocolate chips.
Once they are incorporated, scoop ¼ cup of the dough and flatten onto your palm. Press one unwrapped caramel into the center and roll a ball with the dough around it.
Place each ball of dough onto a parchment lined baking pan. Then we will bake for 13-15 minutes. The dough will make exactly 12 large cookies.
TIPS: Use a thin metal spatula to transfer the cookies to a cooling wrack. The cookies are extremely delicate once removed from the oven.
You may have some casualties, but that is okay. Let them all cool for at least 10-15 minutes and get ready to taste some ooey, oozy delicious magic.

Gooey, oozy caramel stuffed chocolate cookies made with a peanut butter base. No flour.
Ingredients
- 1 Cup of Creamy Peanut Butter
- 1 Cup of Granulated Sugar
- 2 Large Eggs
- 2 Cups of Semi-Sweet Chocolate Chips
- 12 Werther's Original Soft Caramels, unwrapped
Instructions
- Preheat oven to 350°
- In a medium bowl, combine peanut butter, sugar and eggs with a spatula by hand until fully blended. DO NOT over-mix. Fold-in the chocolate chips.
- Scoop ¼ cup of dough and roll and press flat into your palm. Place a caramel in the center and roll the dough into a ball, place onto a parchment lined baking sheet. (do not press down) Repeat with the rest of the cookie dough.
- Bake for 13-15 minutes.
- Makes 12 large cookies.
