Is there anything better than a dreamy dessert made with whipped cream and crushed pineapple? This old school Pineapple Vanilla Wafer Dessert will cure just about any cravings. This post may contain affiliate links.

This easy dessert recipe is perfect for almost any occasion. It's really easy to make and it's no bake. It's one of the few creamy pineapple desserts made without cream cheese and without Cool Whip that I've seen around.

Since my 3 ingredient pineapple dessert recipe is so popular on the blog, I thought this new no bake pineapple would be the perfect addition.

PINEAPPLE VANILLA WAFER DESSERT RECIPE

Pineapple desserts like this have been around for ages and ages. A few months ago, I spotted a cookbook called Betty Crocker's Hostess Cookbook in the show Mad Men. It was on a shelf in Betty Draper's kitchen and I knew I just had to see what was inside.

So, I got my hands on an original hardcover spiral and had fun exploring the recipes and hosting tips inside including a recipe for a pineapple dessert made with vanilla wafers.

The recipe called for egg in a no bake recipe, so I decided to swap it out with a little sour cream. I just love the outcome!

PINEAPPLE VANILLA WAFER DESSERT INGREDIENTS

The recipe calls for only a handful of very simple ingredients, which I love. Here is a simplified list of what you will need to make your own delicious pineapple dessert made with real whipped cream.

  • Vanilla Wafers, crushed
  • Butter, both softened and melted
  • Confectioner's Sugar
  • Sour Cream
  • Crushed Pineapple, Drained
  • Heavy Cream, Whipped

HOW TO MAKE PINEAPPLE VANILLA WAFER DESSERT

What I love most about this recipe is that it's so simple to make.

This dessert is best made in a 8" x 8" baking dish.

Spray your dish with non-stick cooking spray to start.

Next, we will make the crust which is really simply crushed vanilla wafers and melted butter. Then, we will press it into your baking dish.

Press buttered crumbs firmly and evenly into the bottom of your baking dish.

Time for the next creamy layer which involved combining softened butter, sour cream and confectioner's sugar until smooth and pour on top of the baking dish.

For the final layer, we blend drained crushed pineapple and whipped cream until well combined. Add the layer on and use a spatula to make it smooth.

For a final touch, add the reserved crushed vanilla wafers over the top or around the corners of the dish.

The dessert needs to set a bit before serving, so it's best to make it the night before. If you can't, make sure to at least refrigerate it for 12 hours before serving.

A cherry and a little extra whipped cream look extra pretty if you care to garnish.

Pineapple Vanilla Wafer Dessert

Easy pineapple vanilla wafer dessert made with canned crushed pineapple, sour cream and a delicious vanilla wafer crust.

Ingredients

  • 1.5 Cups Vanilla Wafers, Crushed (¼ Cup Reserved)
  • 3 TBSP Butter, Melted
  • 1 Stick Butter, Softened
  • 1 Cup Confectioners' Sugar
  • ½ Cup Sour Cream
  • 1 Can Crushed Pineapple, well drained
  • 1 Cup Heavy Cream, Whipped with Firm Peaks

Instructions

Spray 8x8" baking dish with non-stick cooking spray.

Combine Crushed Vanilla Wafers (making sure to reserve ¼ cup for later) with melted butter.

Press buttered crumbs firmly and evenly into the bottom of your baking dish.

In a mixer, add softened butter, sour cream and confectioner's sugar and mix until full blended.

Pour mixture evenly into baking dish.

Add drained crushed pineapple to a small mixing bowl and fold in the whipped cream until combined.

Put mixture evenly into baking dish.

Add the remaining vanilla wafer crumbs over the top. Spread evenly over the top. or line them up around the corners.

Refrigerate overnight or at least 12 hours. Slice, serve and enjoy.

Notes

Optional Garnishes: More Whipped Cream and a Maraschino Cherry.

My grandma made this every yr I have the original recipe in her hand writing calling for eggs and I make the exact same way no sour cream substitute and it’s amazing and in 40 yrs no one has gotten sick..for me sticking to the original vintage recipe is the way to go.. it’s not the same if you start tweaking a classic recipe such as this ( unless you have an allergy ) that’s just my view .. no disrespect.

@Jacqueline nisbet, After reading this, I was sure it had been written by a cousin! 😂 What you describe is exactly my grandmother made every Thanksgiving. My grandmother died nearly 50 years ago and it is still a treat in our family. No one has gotten sick! I have to admit, I sometimes use egg beaters.
