Slow Cooker Broccoli and Cheese Soup Recipe

This soup is delicious and super easy to make in the slow cooker! It's unique because it has a secret ingredient that makes is SO SO thick. Like unbelievably and unusually thick in the very best way possible. This is comfort food on it's finest. Serve this broccoli and cheese soup in a bread bowl to take it over the top. Garnish with more cheese and broccoli to make it pop.

It's hard to believe that I published this recipe originally back in 2011! Basically before I had any idea what I was really doing here. As I was going through my blog to delete old posts that just don't work, I hesitated to ditch this one.

The photos were out of this world awful, but I figured instead of deleting, it was inevitably was worth keeping. So, fast forward until now and here we go again but now with an actual post and more helpful photos.

The first time that I made this slow cooker recipe, I served it along with warm french bread, it was pure heaven, yum!

So whether you serve it in a bread bowl or with a side of bread, you're in for a real treat.

CROCK-POT BROCCOLI AND CHEESE SOUP

This soup warms the soul making it perfect for winter and basically any time of the year. Let me show you how I made this.

At this point, you're probably wondering about that secret ingredient that I mentioned at this point?

Don't blink because you are going to see it in the slow cooker photo below. 😉

The secret ingredient is (insert drum roll here) noodles.

At first I thought that was very strange and that they would be really mushy! Well, I was mostly right!

The noodles break down but instead of being what I'd call mushy, they actually contribute to the creaminess of the soup. Go noodles!

It probably sounds pretty weird, but you have to promise to try this at least one time before you knock it.

Here is what you need to make this easy delish slow cooker soup:

  • Egg Noodles
  • Frozen Chopped Broccoli
  • Chopped Onions
  • Butter
  • Flour
  • Shredded Cheddar Cheese
  • Whole Milk
  • Salt & Pepper

This recipe is easy as can be. All of the ingredients get put into the slow cooker and with a quick mix, its ready to cook.

Slow Cooker Broccoli and Cheese Soup Recipe

Yield: 8
Prep Time: 10 minutes
Cook Time: 4 hours
Total Time: 4 hours 10 minutes

Ingredients

  • 2 cups uncooked Egg Noodles
  • 1 package (10oz) Frozen Chopped Broccoli, thawed
  • 2 Tablespoons chopped onions
  • 2 Tablespoons butter
  • 1 Tablespoon flour
  • 2 Cups shredded cheddar cheese (Mild or Medium)
  • 5 ½ cups Whole Milk
  • Salt and Pepper to taste

Instructions

    Add Egg Noodles, Broccoli, Onions, and Cheese in a 6 quart slow cooker.

    Pour Milk into the slow cooker. 

    Add Butter, Flour, Salt and Pepper to taste and stir.

    Set slow cooker to LOW, cover and cook for 3-4 hours.

    When done cooking, an option is to use an immersion blender to puree the mixture in the slow cooker, or remove mixture to blender and blend until smooth. Return to slow cooker. Feel free to leave the veggies a little chunky as well.

    Serve warm in a Sourdough bread bowl if desired and enjoy!

  1. The recipe calls for 2 tablespoons of chopped onions, but the picture looks like more than that. Is the 2 tablespoons the right amount?

  2. Can you use any other type of Mike in place of regular mime for lactose intolerant? My body can handle cheddar cheese but not milk.

    1. I haven't tried any others, but I suspect it would be okay to do. Esp if it was something like Lactaid. Let us know how you make out!

    1. Its worth a try once! I was very impressed! It worked out nicely too because we lost electricity right when this was ready to eat! Hot fresh food and no power! Luckily we got it back in about an hour so I could salvage leftovers 😉
