3 Ingredient Portobello Chicken in the Slow Cooker

I've personally been playing around with some minimalist slow cooker dinner recipe ideas.
This slow cooker recipe has only three ingredients and is perfect for adding your own flair to with spices and extra flavorings. The possibilities are endless.
Dinner does not get any less complex than this one, my friends.

This recipe was made for crazy busy people that need easy meal solutions.
This was the first time using Portobella mushrooms (Baby Bellas in this case) in my slow cooker, but it sure won't be the last.
I just love them cooked almost any way, but they really add a lot to this very simple recipe.
With only three ingredients like my classic salsa chicken, plus some salt and pepper, this is a no fuss simple dinner idea.

Portobella Chicken Slow Cooker Recipe
Easy three ingredient chicken recipe with portabella mushrooms a can of cream of chicken soup and your choice of seasonings.
Ingredients
- 1 Pint of Baby Bellas (or equivalent in sliced portabella mushrooms)
- 1.5 - 2lbs Boneless Chicken Tenderloins or Sliced Chicken Breast
- 1 Can of Cream of Chicken Soup
- Salt & Pepper to Taste
Instructions
- Place chicken in the bottom of slow cooker, evenly dump the mushrooms on top and then cover with the cream of chicken soup.
- Sprinkle desired about of salt and pepper on top (and any additional seasonings)
- Cook on high for 4 hours or low for 6 hours.
- Do a taste test to determine if your dish could use a little more salt & pepper or seasoning before serving.
- This simplistic recipe relies on the seasonings to kick up the flavor. Enjoy!

This is so easy and delicious! I do have a question though, cause mine came out pretty soupy instead of creamy…it’s still enjoyable, but I’m wondering what may have caused that? Haha 😆.
Maybe mix the soup with some corn starch?
Can you use regular whit mushrooms instead of Portobello mushrooms ?
Hi. I don't have a slow cooker but do have a Le Creuset pot. Online it says 190 degrees is the same as a cooker on low. Think this will work?
I have a similar recipe but it calls for golden mushroom soup and onion soup mix is sprinkled on top at the end then baked in oven. I'm wondering if they are ok to use in crockpot in this recipe? Love that it can be made ahead as a Nurse I can leave instructions for dinner and my teenage daughter can finish it up if I get called in.

I definitely needed more seasoning. But it was super easy and I will make it again.

Is the can of cream soup just dumped in as-is, or do I also need to add an equal amount of milk or water as per the usual instructions of such soups?

I added sliced small gold potatoes, a dry ranch seasoning packet and a small can of spicy v8. It smells wonderful and tastes amazing.
🙋💁 I've been bantering with my husband for over 3 hours regarding the required amount of soup ratio vs. the amount of Portobello Mushrooms in the recipe for our 8 qt. Crock pot. He said it's fine. I'm deeply struggling to understand "fine" when only 1/8 of the mushrooms were able to become covered with the soup!
We have been together since 1993. This is the FIRST time he's agreed to try preparing a crockpot recipe with me! He's the chef. It's only the 2 of us. Aaaaaa!! I have an entire 300+ multiple Pinterest boards hinging on the success of this recipe ...which he said was extremely vague from start to finish.

I make something similar to this but I add 1 8oz. cream cheese to it and mix it with the soup. You can also try the flavored cream cheese's like chive and onion, garden vegetable and garlic and herb for more variety!

This sounds delish but one viewer asked about chicken broth and cream cheese in place of creamed chicken soup. Your thoughts?
I feel like that might work well, although I do like the depth the condensed soup adds. I would try it and add extra seasonings to compensate.
Bob, I add cream cheese and mix it with the soup. It turns out great! You can also use the different cream cheese flavors for some variety like garlic and herb.
What kind of seasonings do you add?
Salt and pepper are a must! Then, I like to add garlic powder from time to time. It really is flexible with what you can add. Fresh herbs are also amazing.
You say cream of chicken soup yet have a picture of cream of mushroom soup. Which one to use?

Can you convert this to Keto friendly by omitting the soup, use chicken broth and cream cheese instead?
May need extra doctoring up, but that is something I would give a try.
Could you do this in an Instant Pot for faster cooking?
I've never tried it, but as long as you get the timing right.. I bet it could work.

You could try fouling some of the liquid out of the mushrooms to make it less soupy. I will be trying this recipe next week.

How many people does this serve? Just trying to figure out the calories, etc. Sounds D Lish.
Its in my slow cooker now. I added a dash of heavy cream and a handful on chopped vidalia onion and a dash of organic garlic pepper. Smells fantastic already! Going to toss a handful of shredded sharp cheddar cheese towards the end ..maybe. Taste test will let me know. Thank u for sharing this.

i tried this last night...it turned out really soupy...any ideas why?
Hey Danielle, did you use a small can of soup? Did you use fresh mushrooms? The soup is soupy, especially when it's piping hot. We use the liquid as a gravy and re-pour over the chicken. Hope that helps!

I did not have soup......soooooo I used jelled broth from another chicken dinner. I added a jar of mushrooms, 8 ozs. of cream cheese, 8 ozs. of sour cream and a small bag of green lima beans......On down the road the brain is wondering about the thickening......milk and flour, as in gravy and threw in 12 perogi's and a big handful of egg noodles. I'm hopin' it will be delicious. Everything chimes together. I love experimenting...:))) I got 2 more hrs., on high.........sooooo I'll let ya know the results. Love, Joanie :))

Hey Angi, I use a small can. But you can use the larger if you want it more saucy.

I used to make this in the oven... well kind of. Instead of mushrooms and cream of chicken I just did chicken with cream of mushroom over rice. DEFINITELY going to try this!!! Yum!
