I've made a handful of varieties of Italian Love Cakes over the last several months and it's almost impossible to mess them up. They taste great with vanilla cake, pumpkin cake and most definitely chocolate cake.
So feel free to swap out flavors of cake mix and pudding mix for any occasion. The only cake mix that I did not like with this recipe is Gingerbread. So don't say that I didn't warn you on that one. Now, let's jump on into this Christmas cake recipe.

- Funfetti Holiday Cake Mix (+ ingredients needed to make it according to box directions)
- Ricotta Cheese
- Eggs
- Granulated Sugar
- Vanilla Extract
- Instant Vanilla Pudding Mix
- Whole Milk
- Cool Whip or Whipped Topping
HOW TO MAKE CHRISTMAS LOVE CAKE
First start by heating your oven to 350 degrees. Then, spray your (9 x 13") baking pan with non-stick cooking spray.
Prepare cake mix in a medium bowl according to the package directions. Once that is mixed, pour the batter evenly into the baking pan.
Next mix ricotta cheese in a medium bowl, along with the eggs, sugar and vanilla extract until the batter is nice and smooth.
Then, pour the ricotta mixture over the cake mixture in the baking pan slowly and carefully, being sure to cover the cake batter evenly. Use a spoon or spatula to carefully cover any areas that you missed with the mixture.
The cake goes into the oven for about 53 minutes, just under and hour. Once it's all baked up, we want to cool it. This can take up to two hours, so be sure to plan that time.
While the cake is cooling, its a great time to make the final creamy layer which is basically pudding mix and Cool Whip blended together. Spread this glorious mixture on top of the cake and keep refrigerated.

Christmas Funfetti Love Cake
Festive three layer holiday cake made with Funfetti Holiday Cake Mix, Ricotta Cheese and a creamy pudding whipped topping.
Ingredients
- 1 Box Funfetti Holiday Cake Mix (+ ingredients needed to make it according to box directions), 15.25 oz
- 32 oz Ricotta Cheese
- 4 Eggs, Large
- ¾ Cup Sugar
- 1 Teaspoon Vanilla Extract
- 1 Box Instant Vanilla Pudding Mix, 3.4 oz
- 1 Cup Whole Milk
- 1 Tub Cool Whip or Whipped Topping, thawed, 8 oz
Instructions
- Heat oven to 350 degrees & spray baking pan (9 x 13") with non-stick cooking spray.
- In a medium bowl, prepare cake mix according to the package directions. Pour evenly into your baking pan.
- In a medium bowl, mix ricotta cheese, all (4) eggs, sugar and vanilla extract until completely smooth.
- Carefully pour the ricotta mixture over the cake mixture in the baking pan, covering as much space as you can evenly. You can use a spoon or spatula to carefully cover any areas and sides that are difficult to cover.
- Bake for 53-57 minutes, cake is done when a toothpick can be pressed into the center and come out clean. Cool cake completely, about 2 hours +is best.
- Prepare the creamy topping. In a medium bowl, mix milk with dry pudding mix for two minutes and refrigerate for 10 minutes. When pudding is set, fold in the Cool Whip until completely blended.
- When the cake is completely cooled (takes about 2 hours), spread the Cool Whip mixture evenly on top. Store in your refrigerator.
- Cake is best served very cold or next day.
Optional garnishes: extra sprinkles right before serving. Dollop of whipped cream or Cool Whip.
