How to Make Funfetti Birthday Cookies
Make the batter: In a mixing bowl, add the flour, cornstarch, kosher salt, and baking powder. Whisk together and set aside.
In another bowl, using a mixer, beat the butter, granulated sugar, and brown sugar. Beat until it is fluffy.
Add in the eggs and vanilla extract. Mix well. Then slowly add the dry ingredients. Mix well but do not overbeat.
Add the mini chocolate chips, chocolate chips, and sprinkles to the mixture. Mix until the ingredients are combined, there is no more dry flour and the chocolate chips and funfetti are well blended in the mixture.
Important Step: Refrigerate the dough for 30-45 minutes
Scoop the Cookies: Line a large plate with parchment paper. Use a large cookie scoop to scoop the dough into balls. Place six of the dough balls on the lined baking sheet and flatten them out into a thick disc. You can use your fingers or the back of a 1-cup measuring cup.
Tip: If you have warm kitchen, refrigerate the cookies again while you preheat the oven.
Bake: Bake the cookies for 14-16 minutes or until the edges are golden brown.
Cool on the cookie sheet for 3 to 4 minutes then transfer to a cooling rack to cool completely. While the cookies are cooling, prepare the frosting.
Decorate the Cookies: Place the frosting in a piping bag and I used a 1M piping tip. Frost the cookies to your liking and add a sprinkle of funfetti

- 3 cups unbleached all-purpose flour
- 1 tablespoon cornstarch
- 1 teaspoon kosher salt
- ½ teaspoon baking powder
- 1 cup softened butter
- ¾ cup granulated sugar
- ¼ cup light brown sugar
- 3 eggs
- 1 tablespoon vanilla extract
- ½ cup mini semi-sweet chocolate chips
- ½ cup chocolate chips
- 1 cup sprinkles
- Vanilla buttercream (optional)
Instructions
- In a mixing bowl, mix the flour, cornstarch, kosher salt, and baking powder. Set aside.
- In a separate large mixing bowl, with a hand mixer, mix the butter, granulated sugar, and light brown sugar. Mix until all ingredients are combined and fluffy.
- Add in the eggs and vanilla extract. Mix well.
- Add the dry mixture in increments, mix well but don’t overmix. I like to use my Danish dough whisk for this step.
- Add the mini chocolate chips, chocolate chips, and sprinkles to the mixture. Mix until the ingredients are combined, there is no more dry flour and the chocolate chips and funfetti are well blended in the mixture.
- Refrigerate the dough for 30-45 minutes

- Place them on the lined plate and refrigerate them while you are preheating the oven to 350 degrees F. (especially if you have a warm kitchen)
