Peanut Butter & Jelly Bars Recipe
Dessert bar that tastes like a peanut butter and jelly sandwich from childhood. Peanut butter based dessert bar topped with layer of jelly and then peanut butter chips and salted chopped peanuts.
Ingredients
- ¾ cup ( 1 ½ sticks) salted butter, softened
- ¾ cup granulated sugar
- ¾ cup creamy peanut butter
- 2 ¾ cups all-purpose flour
- ½ cup grape jelly
- 1 ½ Tablespoons cornstarch
- ⅓ cup salted peanuts, roughly chopped
- ¼ cup peanut butter chips
Instructions
- Preheat the oven to 350 degree Fahrenheit and spray an 8x8 baking dish with cooking oil or line with parchment paper.
- In a mix, beat butter and sugar together until light and fluffy, about 1-3 minutes.
- Beat in a peanut butter and mix for one additional minute.
- Add in flour and stir until just incorporated. Do not over mix.
- Press half of the dough into the baking pan to create a crust. Smooth out the top so that it lies flat.
- In a small bowl, stir together cornstarch and jam until the mixture is smooth.
- Spread jelly evenly across the top of the crust until it reaches the edges.
- Crumble the remaining dough over the jelly layer. Top it off by sprinkling with salted peanuts, peanut butter chips, making sure to cover the jam with each new addition. Do not press mixture down.
- Bake in the oven for 30-35 minutes or until the bars are golden brown and the top layer takes on a matte finish. There should also be no jiggle when the pan is moved.
- Allow bars to cool completely before cutting and serving.
