For a hearty bite and a lot of flavor, I used Cooked Perfect Italian Style Meatballs that are 1 oz. “Dinner Sized” for this recipe.  They say "go big or go home" and these hearty appetizers fit the bill for snacking on during an intense game of football. You can choose from your favorite flavors like Homestyle or Swedish and even varieties like Turkey and Chicken meatballs.

Buffalo Blue Cheese Meatball Cups Recipe

To prepare this recipe in time for the big game, add the meatballs in the slow cooker until they’re cooked through. I added buffalo sauce in with the Italian Style Meatballs, extra easy. Cook for up for 3-4 hours on low and give them a few stirs throughout the cooking process. Then, when they're done cooking, turn off the heat and stir in blue cheese dressing to get the party started.

For the perfect meatball holder, we're using thick frozen garlic bread baked using a muffin tin to form cups. By defrosting the garlic bread, you'll be able to shape them easily. I just love creating delicious meals and appetizers using muffin tins and my family enjoys trying them out. So many fun possibilities.

Once the meatballs are made to perfection and the garlic bread cups are ready, it's time to make the magic happen. Spoon a meatball and sauce into each bread cup.

Sprinkle some shredded mozzarella cheese over the top.

For an added pop of flavor and color, you can add chopped chives or green onion too. This seriously compliments all the flavors and makes these meatball cups extra pretty to look at.

Buffalo Blue Cheese Meatball Cups

Buffalo Blue Cheese Meatball Cups

Ingredients

  • 1 Cup Buffalo Sauce
  • 1 Cup Blue Cheese Dressing
  • 1 Package Cooked Perfect Meatballs
  • 1 Cup of Shredded Mozzarella Cheese
  • Thick Frozen Garlic Bread Toast
  • Optional: Chives/Green Onions to Top.

Instructions

  1. First, prepare the slow cooker meatballs. Add bag of frozen meatballs and buffalo slow to slow cooker. Cook on low for 3-4 hours. Turn heat off, stir in blue cheese dressing.
  2. To prepare the garlic bread cups before serving: Preheat your oven to 375. Defrost or gently warm desired amount of frozen garlic bread in a microwave. Be sure not toasted in any way or they will not be pliable. Spray your muffin tin with non-stick cooking spray. Press each piece of garlic bread delicately and evenly into the center of your muffin tins. Press the sides back and the center down into the tin to form a cup. Cook for about 14-16 minutes until the bread cups are perfectly crisped. Cool and remove. 
  3. Spoon in one meatball and sauce into each garlic bread cup. Top with a sprinkle of mozzarella cheese and green onions if desired. Enjoy!
