Ingredients
- 12 ounces dry rotini pasta
- 1 ½ cups halved cherry tomatoes
- 1 ½ cups diced green pepper (about 1 large green pepper)
- 1 cup diced white onion
- 1 can (540 ml, 19 fl ounces) black beans, rinsed and drained
- 1 can (341 ml, 12 fl ounces) kernel corn, rinsed and drained
- 2 tablespoons chopped fresh cilantro
- optional: ¼ cup chopped fresh jalapeños*
- Dressing:
- 1 cup sour cream
- ¼ cup fresh lime juice (about 2 limes)
- 2 teaspoons apple cider vinegar
- 1 teaspoon ground chipotle chili pepper
- 1 teaspoon garlic powder
- ½ teaspoon ground cumin
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- ¼ teaspoon ground cayenne
Instructions
In a large pot of boiling water, cook pasta until it is al dente. Al dente pasta means it is softened but still firm.**
Strain liquid from pasta.
In a large bowl, combine all salad ingredients (including strained pasta) then toss to combine.
In a medium bowl, stir together all dressing ingredients until well mixed.
Pour dressing over salad and toss to mix well until all of the salad is coated in dressing.
