Ridiculously Achievable Slow Cooker Salsa Verde Chicken

Loving cooking in my slow cooker with the cooler weather here. Who am I kidding... I love cooking in it anytime. But... I have been trying to find go to recipes that are really simple and I've found another combo that totally works. This post may contain affiliate links.

A while back I shared this easy 3 ingredient slow cooker recipe for fiesta chicken which is a big hit around here.  That recipe calls for chicken, salsa and cheddar soup. Doesn't get more simple than that.

SALSA VERDE SLOW COOKER CHICKEN

This Salsa Verde Chicken recipe had a few more ingredients, but they are all super simple to toss together. This delicious dish is perfect for switching up Taco Tuesday, celebrating Cinco de Mayo and basically to make any night of the week a lot more tasty.

SALSA VERDE CHICKEN INGREDIENTS

With just a handful of fresh ingredients and seasonings, you can have a big pot of amazing slow cooker chicken seasoned to perfection.

  • Boneless Chicken Breasts
  • Sliced Sweet Onions
  • Salt & Pepper
  • Fresh Minced Garlic Cloves
  • Cumin
  • Lime Zest
  • Chili Powder
  • Green Chiles, Canned
  • Salsa Verde
  • Fire Roasted Tomatoes

WHAT SUPPLIES DO I NEED TO MAKE THIS RECIPE?

  • You will need a slow cooker to make this recipe. I used a 3 quart size

HOW DO I STORE THIS RECIPE?

  • You can store this chicken recipe in the fridge in an air tight container or your slow cooker pot itself for up to 3 days. 

CAN I MADE THIS RECIPE AHEAD OF TIME?

  • Of Course. Slow cooker recipes are the best for that. You can make a day in advance as well and reheat in the slow cooker before serving if you like. 

CAN I MAKE ANY SUBSTITUTIONS?

  • You can change the amount of spices and garlic you prefer. You can also change out your preferred salsa with the salsa verde!

Slow Cooker Salsa Verde Chicken

Yield: 4-6

Easy salsa verde chicken recipe made in a slow cooker. Boneless chicken breasts, sweet onions, green chiles and fire roasted tomatoes.

Ingredients

  • 4 Chicken breasts boneless
  • 1 Sweet onion sliced
  • 1 Teaspoon salt
  • 1 Teaspoon pepper
  • 4 Garlic cloves minced
  • 1 Teaspoon Cumin
  • Zest of one lime
  • 1 Teaspoon Chili powder
  • 1 Can 4 oz Green chiles
  • 1 Cup Salsa verde (about 1 jar)
  • 1 Can 14.5 ounce fire roasted tomatoes
  • OPTIONAL TOPPINGS:
  • Lime
  • Red onion
  • Cilantro

Instructions

Place chicken, tomatoes, green chiles, salsa verde, garlic, onion, cumin, lime zest, chili powder, salt and pepper in your slow cooker. Cook on low for 5-6 hours or on high for 3-4 hours. 

Once the chicken is cooked through, remove from the slow cooker and shred with two forks. Place chicken back in the slow cooker and stir. 

Serve chicken on tortillas with toppings or rice! You can also eat it by itself!

  3. Wow that is so easy! I need to use my slow cooker more often because these are great ideas and I really don't like to cook most nights. I use chicken, a Ranch dressing packet (dry mix) and Italian dressing (bottle) and that is really good on tortillas or with chips.

  4. Yay! I love your 3 ingredient recipes. That's about all that I can handle. LOL And definitely making great use of the slow cooker!!!

    1. On occasion it falls apart for me too... I think making sure not to leave it in there too long after it's finished cooking may help. I used boneless chicken breasts also, that may help as opposed to smaller pieces I'd think 😉 As an after thought.. do you cook yours with the skin on? That may also attribute to the break down of the chix!
