Fresh Salsa Slow Cooker Chicken

It's time for some fresh slow cooker ideas with fall in our future. I love coming up with easy recipes and if you've been visiting long enough, you know that I kind of have a thing for slow cooker recipes with 4 ingredients or less. I'm putting together another fresh big list and wanted to brainstorm some more ideas to add to it.  One of my all time very favorite recipes includes just tossing a jar of salsa in with chicken. It's just delicious and so simple to do.

Four Fresh Ingredients come together like magic in the slow cooker! This recipe calls for ingredients that you would make fresh salsa. This is great for making a batch of healthy chicken with just veggies and herbs! Nom.

Earlier this summer, I made a fresh mango salsa chicken which was really tasty and bright made with all veggies and fruits. So, I decided to simplify that recipe just a bit to make this dish. I really love grape tomatoes in the slow cooker, they can really take the heat and still stay together. Plus, they also make a pretty pop of color to this fresh chicken.

This is a very simplistic recipe that draws all of it's flavor from the tomatoes, red onion and cilantro. The juices and flavors add a lot to it, but it may not be for everyone. It's healthy and tastes healthy, ya know? If you're looking for a little more pop, you can add a little taco seasoning. Just sprinkle in either directly on the chicken or simply on top of the whole dish. A little goes a long way to pack a punch!

Fresh Salsa Slow Cooker Chicken

Ingredients

  • 1.5 lbs of Boneless Chicken Tenderloins (or breasts sliced thinly)
  • 1 Large Red Onion (sliced)
  • 1 Pint of Cherry or Grape Tomatoes (halved)
  • Cilantro chopped (few pinches)

Instructions

  1. Place ½ of the sliced onions on bottom of your slow cooker, layer chicken evenly on top, place the remaining onion slices on top of the chicken. Add tomato halves on top. Cook on high for 4 hours or low for 6.5 hours until chicken is cooked thoroughly. Turn heat off and add the cilantro and cover. Let sit for about 5 minutes before serving.
